I would like to know how to exclude countries. For example, I want to exclude countries like the United States and Canada. I can only find information on how to exclude based on IP address.

Hello,
There is no default option that would allow you to do that. The only option here is to exclude the traffic based on IP addresses.
What you could also do here is to filter out the data in the Analytics module by applying a condition that would exclude data from certain countries from appearing in your custom reports or by creating a segment that would exclude the data from the US and Canada traffic.
