I didn’t see an option in my admin Dashboard to add another domain/site for tracking.
Do I simply need to alter my plan to include more domains, or get a separate plan for that domain?
What would be in common to both domains is the ownership: one org owns both. But it’s two distinct domains: not a subdomain.

You can add more domains in Menu → Administration → and on bottom left in Site and apps list there should be button → + Add Site or App
If I understand correctly you want to keep data, consents, tags separate for those two websites? If the answer is yes - should proceed to create new setup for second domain.
