once we selected the self-hosted solution is still possible to easily switch to the cloud solution? How?

Hi. Are you using the paid version of Piwik PRO? Answering your question - yes, it will be possible. The migrator is currently in the works (ETA end of May), but in general, it will be possible to migrate between all offered deployment types.
