I would like to know if there is a possibility to track a sharepoint analytics since the last version has been deprecated?

Hi! Unfortunately, the SharePoint integration is not supported anymore.

Does this mean SharePoint can’t be tracked at all anymore, or could regular Piwik tracking code be injected and still work?

If there is a way of adding the tracking code to Sharepoint then it should work. We just don’t support the integration anymore.
